Chicken a la King


Winner winner chicken dinner!!! That's what The Family had to say about tonight's dinner. Definitely gonna have to make this again. Got the idea from Diners Drive-ins and Dives last night. It was SO filling.. definitely stick to your ribs comfort food. But it was sooooo freakin good!

Here's what I did..

1 onion, diced
2 stalks celery, diced
2 carrots, diced
1 green bell pepper, diced
2 cloves garlic, minced
1/2 stick butter
2 Tbs olive oil
1/2 cup AP flour
1 qt chicken stock or broth
1 cup milk
2 tsp poultry seasoning
2 tsp salt
2 tsp garlic pepper
the meat from 1 store-bought rotisserie chicken, pulled into big chunks
1 cup frozen peas

Okay so first I got my big red enameled cast iron dutch oven nice and hot and put the half a stick of butter and oil in it.. once the butter was melted, I tossed in all the diced veggies (but not the peas) and added a heavy pinch of salt to them and gave them a stir and turned the heat to medium low to let the veggies sweat. When they were cooked down and nice and soft and sweet, I added the flour to the pan and turned the heat up and cooked it for just a minute or two. Then I poured in all the stock and whisked the heck out of it. I added the milk, and the seasonings and let the whole thing come to a boil and thicken up to the consistency of gravy. When dinner was ready to be served, I stirred in the peas and the chicken meat. Serve it up over biscuits or mashed potatoes.. or both! That's how Justin did it.. tore up his biscuit, and mixed all of it together. And proclaimed how yummy it was several times while eating.

Really easy, REALLY tasty. Definitely making this again and again. :)
